Now one state lawmaker says it’s time for everyone to wake up and smell the chile.

Sponsored by [Sen. Bill] Soules, Senate Bill 188 seeks to adopt “the aroma of green chile roasting in the fall” as “the official aroma of New Mexico.” If approved, the aroma would join a list of more than 20 other state symbols, not to mention a handful of state songs, a ballad and a poem.

I had no idea that any of the states had an official smell. I wonder what it is for Pennsylvania. As for green chiles, I have no idea what they smell like.
I think it’s a new idea. If so, NM would be the first to have one.

Girl, you’re singing my song! Only yesterday UPS delivered 5# of flash frozen Hatch chile. We’ve no way of roasting them, but there’s nothing to compare to the taste. Now, if someone could replicate the aroma in a candle I’d be all set!

I have never heard of official state smells. And not only that, I have never smelled chilis. Now I am curious how they smell when roasting.
I think the idea is original.
I have a months old jar of Hatch green chili salsa that I have yet to open. Maybe some enchiladas will emanate from my kitchen one of these days.
