Adding Joy to a Dreary Day

Preheat oven to 200C/400F. Cut a cross on the potatoes. Put the potatoes at the top of the ovenโ€”straight on the rack, not a baking tray. Cook 1-2 hours (usually closer to 2). When they feel crunchy on the outside, pull the rack out, cut the potatoes open again to release the steam, then put them back into the oven. The major important thing is NOT to turn the oven down as they go soggy and lose their crunch. After ten minutes, serve immediately with shedloads of butter, salt and pepper. Perfect.

We saw this recipe a few days ago so Kaitlin and Torben tried it on a chilly, dreary day when the oven helped warm the house. Kaitlin said they usually don’t eat baked potatoes but they really enjoyed them. We don’t have an oven here so I can’t try it, but it warmed my heart that they did.

As the saying goes, sometimes we have to make our own sunshine. What do you do?

  2. somehow I’ve not had spuds in the house for some time, I’m a kumara kind of gal…but also not having roasted any of them either. I used (years ago) use my microwave for spuds – and usually turned out real nice.

    I sit here at my table with the “dead” microwave on it – as it’s going to be picked up and sent to electronic graveyard, hopefully this week. Along with a few other items including various computer gadgets, printer, el.kettle, old boom box …

    I’m not missing my microwave, although there has been moments!!

    They sound delicious and look delicious. I don’t use my oven because it’s too hot here but I do make Bob a baked potato in the microwave have to be careful not to overcook them. And I buy the little small golden new potatoes in a bag and I boil them for 15 minutes on top of the stove and they’re absolutely delicious but I don’t use food for joy because I can’t eat the foods that give me joy. I think the only the thing that gives me the most Joy is taking a photo and emailing it to myself and playing with it or like making my header gave me joy

    I use microwave!! Too hot here to set oven for baked potatoes. They DO look delicious tho. And “shedloads” of butter…indeed!!!

    So you cook everything on the stove, and cannot bake? We use a toaster oven and it works well.

      We have limited counter space and I had the gas to the stove turned off years ago because it wasn’t vented to the outside. We mostly use the microwave and the InstantPot.

    I always wondered what jacket potatoes were. They look delicious but my lack of patience would not make that doable. I microwave baking potatoes. They sort of steam themselves so don’t get crunchy, though. We rarely use our oven anymore even though it’s winter here so heat is welcome. We do occasionally cook chicken wings but that’s pretty much it for our oven now.

      I had the gas turned off to our stove years ago. Then we had micro convection ovens for a long time, but now they’re too heavy for us to deal with so we have a smaller microwave and an InstantPot.

  7. Like others have said, we rarely engage our oven. Still, these look delicious. What a great concept!

    These days I do baked potatoes in the microwave. I don’t use my oven nearly as much as I used to. I like the idea of making them to have the oven heat the house up though ๐Ÿ™‚ They look good.
